A three-day course designed to advance both your sensory and practical barista skills. You’ll explore the up-to-date concepts and techniques of the best speciality baristas - an essential course for head baristas, trainers and dedicated coffee professionals alike.

All SCA courses include the certification process. Please note that a mandatory Course Enrollment Fee of €50 is payable directly to the SCA, in addition to the course fee stated on our website. You can find more information here, and will need to register as a Learner with the SCA before the date of your course.

Course content
At this level you’ll further develop your sensory skills by exploring and evaluating tastes and organic acids in coffee, improving both your palate and coffee knowledge. Using these skills you’ll work on designing, evaluating and optimising brew recipes that are specific to the coffee, machinery and environment that you’re in.

We’ll work on latte art technique to produce coffees to the highest standard, and explore the effect equipment and tools have on efficiency. We’ll also look closely at water chemistry, including testing, the effect on brewing and how to use different filtration methods to optimise your water to SCA Standards.

Completion of this course gives you all the information necessary to manage espresso quality across multiple sites, or to design the brand standards for a successful speciality cafe.

Prerequisite skills
Students attending this course should have passed the SCA Barista Skills Intermediate course 3 months before attendance, as well as having a very good understanding of espresso techniques - 12+ months of work experience as a speciality barista is ideal.
